Gluten Free Meat Pie

Well today was a first for me in baking a gluten free meat pie!

First off I found a fantastic recipe by Presidents Choice online

and followed the shopping ingredients almost to a T and then I went home and made sure I used all glass and metal bowls since my wife has celiacs disease and any plastic could be contaminated. I then simply prepped my glass table for baking and rolling out the dough and voila, things were a go.

I mixed all ingredients in their proper order and prepared the dough for rolling. The best advice was to put the dough in a ziplock bag and place it in the freezer for 20 min and boy did that help for rolling once I prepped the table with gf flower. I laid the dough on the table (with the powder) and needed it by hand (next time it’s with a new glass rolling pin, umm actually a wine bottle) then I took the slightly flattened dough and shaped the bottom part of the pie on the glass pie plate and filled it with my precooked lean pork and mixed veggies. When I filled the meat pie I added a pinch of sea salt to taste and then placed the top layer of dough on top and poked holes for the steam.

This time was just a run through and a taste test to see how well it would come out. My wife said it was the best!

The Art Of Love And Grace

In Laughter We Love

I woke up this morning thinking right away about laughter and love, how such beauty can orchestrate the most magnificent joy in the toughest of times. Laughter is that instant vacation that takes you away from your present circumstances, your disappointments, your worries and the instantly fade away for a brief amount of time. Now the wonderful thing about love is, it's like a thumbtack that sticks to the forefront of your mind and your heart. Together laughter and love make a marvellous song that can bring the greatest of triumph.
I created this art piece of Lee and Rosemary from the tv show "When Calls The Heart" and it is a joy to make this kind of art because the purity of the show is amazing.

A Day Of Snow

A DAY OF SNOW

Yes, I'm one of those people. I'm one of those rare breed that love it when the snow falls, it's something in my blood, or in my disposition. I just can't help myself, I feel like a kid every time I see the snowfall.

In Langley, BC. it's a rare thing that comes and goes usually quickly and so when I get a chance I capture it with my camera and I search for the most beautiful moments worthy of a smile.

First of all, it's a no brainer to go right to Fort Langley and just hunt for those amazing moments. They are too easy to find but in the freezing cold, it's worth it!





























Of course at the end of it all I had to write in the snow at FLEFC the word Jesus, simply because he is the reason why I have such an amazing outlook on life, love, laughter, grace and so much more. Bless you all!

The Morning Of Grace

Well how do you begin a morning full of grace?!

That is a good question and often people ask me "why are you such a happy guy all the time?" Is it because i'm ignorant of current circumstances, trials, adversities or dilemmas? No in fact I'm very aware of many circumstances and trials but what makes me smile in the morning, what makes me really happy; it's the simple things in life. Counting your blessings and being actively aware of what God has done and in doing so, I see He always has good things ahead. Sometimes the road is rough, maybe even brutal, laced with blood, sweat and tears but eventually God always works it out for His good and for mine as well.

The joy is knowing God always has everything under control and He's not surprised by what we face or what we must endure. He is always perfect in His love, mercy, grace and His timing. He knows just how to turn the most impossible things from sour to sweet, from ashes and dust to a mountain of victory. That's the God I serve, the God of perfect grace and that makes me smile, makes me overjoyed in every circumstance. I'm not dumbfounded by adversity but rather I'm inspired by God's perfection and His faithfulness despite overwhelming odds.

When you feel discouraged, count your blessings and literally name them one by one. Suddenly things seem much brighter in the end.

Crazy Dreams

Have you ever had one of those dreams where it seems
to rip your heart in two and then you wake up screaming?
Well that was my night, that was my moment and it shows you
that sometimes dreams can tell you a lot about your fears. Fears have this crazy way of trying to tell you or dictate to you what you can and can't do subconsciously. You start to realize that maybe your own fear of rejection etc. just might dictate some of your life choices and behaviours. Those very struggles are the kinds of weeds that can strangle the potential for amazing blessings in Christ Jesus. God calls His children to step into the garden of our fears, hopes and dreams and pull out the weeds of despair, anxiety, loneliness, discouragement and pursue what God has planned for our lives. What He designs is far better than what we come up with and how we deal with our troubles and trials in life. He is the perfect farmer, knowing just when to plant the right seeds at the right time and when to cultivate and harvest.

~Letting Go~

I wrote this today, thinking about experiences I've had, people I've met, friends, family etc. and the tough reality of some choices made and how time shows how friends come into your life and how time can show others quickly fading. I look back and amazingly enough I have fond memories of good childhood friends who were unbelievably faithful and kind and without a shadow of a doubt they would remain consistent. Things change, life hands you new circumstances and the song begins anew.


Thankful for the beauty in ashes, the oil in mourning and the joy in mercy...
